This is a fairly traditional breakfast casserole. Well, except for the chilies, which do add a little flavor and heat. Along with those, it contains a generous helping of other vegetables to keep you going through the morning.


  • 24 ounces (680 g) frozen hash browns
  • 1 cup (233 ml) skim milk
  • 1 cup (235 ml) egg substitute
  • 1/2 cup (80 g) onion, diced
  • 1/2 cup (75 g) red bell pepper
  • 4 ounces (115 g) diced green chilies
  • 3/4 cup (83 g) Swiss cheese, grated
  • 6 slices low sodium bacon, cooked and crumbled


Spray a 9 × 13 inch (23 × 33 cm) pan with nonstick vegetable oil spray. Add hash browns. Cook in 350°F (180°C, or gas mark 4) oven for 20 minutes. Mix all remaining ingredients, pour over hash browns (potatoes), and cook for 30 more minutes.

To divide this into as many portions as you want to eat it:

  1. When you’re done preparing meal, measure it with a good kitchen scale.
  2. Note the weight.
  3. If you intend to eat it for, let say 2 times, divide its weight by 2 to know the weight of every portion you’ll be taking.
