Green chilies and taco seasoning provide the Southwestern flavor of this beef, egg, and cheese bake. It’s as good for lunch and dinner as breakfast, but that is when we usually have it.

Ingredients

  • 1/2 pound (225 g) extra lean ground beef
  • 2 tablespoons (6 g) taco seasoning mix
  • 3/4 cup (86 g) low fat Monterey Jack cheese, shredded
  • 1 cup (115 g) low fat cheddar cheese, shredded
  • 4 ounces (115 g) green chilies, diced
  • 1 1/2 cups (355 ml) skim milk
  • 1/3 cup (42 g) all purpose flour
  • 2 cups (475 ml) egg substitute
  • 1/2 cup (130 g) salsa

Preparation

In medium skillet, brown ground beef; drain off excess fat. Stir in taco seasoning mix. In 12 × 8-inch (30 × 20 cm) baking dish, toss beef mixture with cheese and chilies. In large bowl, blend a small amount of skim milk into flour until smooth. Stir in remaining skim milk and egg substitute. Pour milk mixture over mixture in dish. Bake at 350°F (180°C, or gas mark 4) for 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before cutting into serving pieces. Spoon salsa over servings.

Note

To divide this into as many portions as you want to eat it:

  1. When you’re done preparing meal, measure it with a good kitchen scale.
  2. Note the weight.
  3. If you intend to eat it for, let say 2 times, divide its weight by 2 to know the weight of every portion you’ll be taking.
